BBQ SLOPPY JOE CUPS

SO. FREAKING. GOOD! And I doubled the recipe to feed my family of 5 with leftovers. Turned out PERFECT!
🏼•12oz 90% or higher lean ground beef
•1/2 cup chopped onion
•1/2 of a 15oz can of Pinto Beans, rinsed & drained
•2/3 cup BBQ Sauce
•1 egg lightly beaten
•1 – 8.5oz pkg. Corn Muffin Mix
•1/3 cup Milk
•1/4 cup light Sour Cream
•1/2 cup frozen whole kernal corn, thawed
•1/2 cup shredded reduced-fat cheddar cheese
1. Preheat oven to 400*F. Line twelve 2-1/2″ muffin cups with foil bake cups.
2. In a large skillet cook ground beef and onion over medium heat until meat is browned. Drain off any fat. Stir in beans and BBQ sauce.
3. In a medium bowl combine the next 4 ingredients (through Sour Cream); stir in Corn. Spoon about 1 tbsp of the batter into each prepared muffin cup. Top each with about 1/4 cup of the meat mixture and about 1 tbsp of remaining batter.
4. Bake 15 minutes of until golden. Sprinkle with cheese. Bake 1 minute more. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.
